Berry Sundae

Berries are packed full of nutrients. They are a great source of antioxidants, folate, plus many other vitamins and minerals. Scientists are actually studying the link between berries and improved memory as well as their ability to reduce inflammation and anti-bacterial properties. Isoflavones, found in soy protein have been shown to help maintain healthy bones by reducing bone turnover and maintaining bone density.

TIP: if you don’t have any ice cream for this recipe, you can use berry flavoured low-fat yoghurt as an alternative.

  • 300g frozen mixed berries
  • 1 litre Sanitarium So Good Vanilla and Boysenberry Swirl soy based ice cream alternative
  • 1 punnet raspberries
  • 1 punnet blueberries
  • 1/3 cup shelled pistachios, chopped

    1. Place thawed berries into a sieve over a bowl and push down with a large spoon until all liquid is removed. Discard the seeds leaving the berry pulp in the bowl.

    2. Place a spoonful of berry pulp in the bottom of six sundae dishes. Layer sundaes with So Good Vanilla and Boysenberry Swirl, berry pulp, berries and nuts.
