Caramelised Onion and Lentil Patties

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 2 medium red onions, finely sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons water
  • 3 medium zucchini grated, squeeze to remove excess water
  • 1 cup fresh wholemeal breadcrumbs
  • ½ cup wholemeal flour
  • 2 eggs, lightly beaten
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander

  1.  Cook lentils in a large pot of boiling water for 10 -12 minutes or until tender. Drain.
  2.  Heat half of the oil in a large frypan over medium heat. Add onions and cook until brown and soft. Add brown sugar and water. Stir to combine. Cook for 2 minutes. Cool.
  3.  Place lentils, onion, zucchini, breadcrumbs, flour, eggs and spices in a large bowl. Mix well and shape into patties.
  4.  Heat remaining oil in a non-stick frypan over medium heat. Cook patties for 5 minutes on each side or until golden. Drain on absorbent paper.
  5.  Makes 18 patties. Serve with a drizzle of low-fat natural yoghurt mixed with cumin.
