Cashew Vegetable Stir-fry

  • 1 teaspoon canola oil
  • 1 medium onion, sliced
  • 2 cloves garlic, crushed
  • 1 teaspoon fresh grated ginger
  • 1 red capsicum, sliced
  • 125g snow peas
  • 100g baby corn, halved lengthwise
  • 1 cup bean sprouts
  • 1 bunch baby bok choy, chopped
  • 1 tablespoon each of soy, sweet chilli and vegetarian oyster flavoured sauce
  • ¾ cup raw cashews

  1.  Heat oil in a wok or frypan. Stir-fry onion and garlic for 1 minute.
  2.  Add ginger and sauté for another minute.
  3.  Stir through capsicum, snow peas, and corn. Stir-fry for another 2 minutes.
  4.  Add remaining ingredients and stir-fry for another 2 minutes, or until heated through. Serve on steamed rice.
