Spiced Peaches with Toasted Almonds

Tip:
To bruise ginger, carefully hit with a solid utensil, like a rolling pin. This process helps the flavour to infuse into the dish.

  • 250g packet of dried peaches
  • 2 cups water
  • 1 cinnamon stick
  • 4 cardamon pods, bruised
  • 2cm piece of fresh ginger, peeled and bruised
  • 2 strips of lemon peel
  • ½ teaspoon vanilla extract (or 1 teaspoon vanilla essence)
  • 2 teaspoons honey
  • ½ cup flaked almonds

  1.  Place peaches in a small saucepan and cover with water. Add spices, lemon peel, vanilla and honey and bring to the boil over a medium heat.
  2.  Reduce the heat until the syrup thickens.
  3.  Allow to cool and refrigerate until required.
  4.  Spread almonds on a baking tray and bake in a slow oven (150C) for 10 minutes, stirring every couple of minutes until nuts are golden.
  5. Serve fruit, sprinkle with almonds with a dollop of yoghurt or on top of breakfast cereal or porridge.
