Thai Noodle Stir-fry

  • 600g Hokkien noodles
  • 2 teaspoons sesame oil
  • 1 red capsicum, sliced
  • 1 yellow capsicum, sliced
  • 1 clove garlic, crushed
  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons soy sauce
  • 2 bunches baby bok choy, halved

  1.  Place noodles in a large bowl and cover with boiling water. Separate noodles with a fork. Drain.
  2.  Heat oil in a wok or frypan and sauté capsicums and garlic until soft.
  3.  Stir through noodles and sauces.
  4. Sauté until ingredients are heated through. Add bok choy and stir fry for about 1 minute, so that it is just wilted.
